Brian Bilston: Salad Days

Those first few days of vegetarian life
were a tough nut to crack.

The carrot and stick approach helped,
but going through Quorn turkey wasn't easy;

there comes a stage, though,
when you have to stop beefing about it,

you figure that it's small potatoes really,
and there are bigger chips to fry.

These days, I'm full of beans.
As quinoa as mustard. Kale and hearty.

I bring home the bagel, not the bacon,
and feed two birds with one scone.

And, if you couldn't care for tofu,
I'll make quincemeat out of you.
